Chicken Liver Fry (କୁକୁଡା କଲିଜା ଫ୍ରାଇ)

  • Chicken liver- 500gm (କଲିଜା)
  • Onion thinly sliced- 10- 12 (ପିଆଜ)
  • Garlic crushed- 4 tsp (ରସୁଣ)
  • Ginger crushed-3 tsp (ଅଦା)
  • Turmeric powder- 1/2 tsp (ହଳଦୀ ଗୁଣ୍ଡ)
  • Chilly powder- 1 tsp
  • Pepper powder- 1 1/2 tsp
  • Garam Masala - 1 tsp (ଗରମ ମସଲା)
  • salt to taste (ଲୁଣ)
  • oil- 2 tsp(ତେଲ)
  • curry leaves
  • Water (ପାଣି)
  • Wash the chicken liver pieces.Keep it aside.
  • Heat the pan on medium heat , then add water, liver, turmeric powder and salt.
  • Allow this to cook for 5 minutes. After 5 minutes, remove it and keep aside.
  • In a heavy bottom pan add oil and first add in curry leaves and when a nice aroma comes add garlic,ginger and saute for a few seconds.Now add chopped onion and fry till golden brown. then add chilli powder, turmeric powder ,garam masala and water(if necessary) and fry till oil separates.
  • Then add boiled chicken liver to masala.
  • Toss gentle and  cook for 5-10 minutes, without a lid on low heat. This will crisp up the liver lightly.
  • Sprinkle a little pepper powder.
  • serve hot as a side dish with rice, roti, paratha.
