Malabar Spinach Prawn Curry

  • Malabar Spinach (ପୋଇ ଶାଗ)
  • 2 potatos (ଆଳୁ)
  • 250 gms pumpkin (କଖାରୁ)
  • 2 medium size brinjal  (ବାଇଗଣ)
  • 1 Tomato (ଟମାଟର)
  • 1 onion - finely chopped (ପିଆଜ)
  •  5-6 cloves garlic - crushed (ରସୁଣ)
  • 1 teaspoon turmeric powder (ହଳଦୀ ଗୁଣ୍ଡ)
  • 1 tsp chilli powder  
  • salt to taste (ଲୁଣ)
  • 1 tablespoon refined oil (ତେଲ)
  • Prawn - 20 pieces                                                                 
 To make the masala paste:
  • 1 tablespoon mustard seeds(ସୋରିଷ)
  • 1 tablespoon cumin seeds  (ଜିରା)
  • 10 garlic cloves (ରସୁଣ)
  • 1 small onion (ପିଆଜ)  
  • Marinate the prawns with a pinch of turmeric powder, kashmiri red mirch, salt and 1 tsp of oil.
  • Then in smoking hot oil, shallow fry them till golden orange in color and keep aside.
  • Cut Potato and Pumkin, fry it and keep aside
  • Cut poi leaves and stem into small pieces then steam it for 3-4 minutes and drain out the water.  
  • Then make the fine paste of the mustard seeds, cumin seeds, garlic and onion.
  • Take a kadai,  put the masala paste, chopped tamato and add some water to it.
  • Add turmeric powder, chilli powder and salt and allow it to warm  for 2-3 minutes over medium flame. 
  • Then add the fry vegetables to the warm masala water and cover the kadai.
  • Let the vegetable cook for 3-4 mins. Don’t allow it to over cook.
  • Then add poi leaves, Prawn and stems and allow it to boil for 10 minutes more. 
  • serve with rice
