Potaoto Puri (ଆଳୁ ପୁରୀ)

  • Whole Wheat flour(atta) + for dusting - 2 cups (ଅଟା)
  • Potatoes, boiled, peeled & greated - 2 medium (ଆଲୁ)
  • Garam Masala  powder - 1/2 tsp (ଗରମ ମସଲା)
  • Carom seeds (ajwain) - 1 tsp (ଜୁଆଣି)
  • Red chilli powder - 1/2 tsp
  • Salt - to taste (ଲୁଣ)
  • Ghee - for kneading (ଘିଅ)
  • water - as required (ପାଣି)
  • Now prepare the dough for the pooris, in a mixing bowl add the wheat flour, greated Potato, Red Chilli powder, Ajwain, Garam Masala powder and salt, and mix well.
  • Then add water as required for thick dough.
  • After making dough add ghee and Knead it with both the hands. 
  • Let it rest for 20 mins, cover the dough with a transparent foil.
  • Make small lemon size rolls from the dough that you have kept aside for 20 minutes. 
  • Roll it with the help of a rolling-pin and deep fry it in the hot oil kadai. 
  • Put the flat rolled dough in the kadai, press it a little with the ladle from the top, your poori will puff by doing so. 
  • For making crispy puffy pooris, fry from both the sides with the help of a ladle in the hot oil kadai.
  • Remove them onto a tissue paper so that the excess oil is soaked.
  • Serve hot with any curry.
