Rajma Curry (ରାଜମା ତରକାରୀ)

  • Rajma (red kidney beans) - 1 cup(ରାଜମା)
  • Onion - 2(ପିଆଜ)
  • Tomato - 2 (ଟମାଟର)
  • Green chilli - 2
  • Ginger garlic paste - 1 tsp(ଅଦା, ରସୁଣ ବଟା)
  • Kasoori methi - 1 tsp
  • Red chilli powder - 1 tsp
  • Garam masala powder - 1/4 tsp(ଗରମ ମସଲା)
  • Coriander seeds powder - 2 tsp (ଧନିଆ ଗୁଣ୍ଡ)
  • Cinnamon - 1 small piece (ଡାଲଚିନି)
  • Cloves - 2
  • Elachi - 1 (ଗୁଜୁରାତୀ)
  • Bay leaf - 1 (ତେଜ ପତ୍ର)
  • Salt As needed(ଲୁଣ)
  • Soak Rajma for 12 hours (overnight) and drain the water. Pressure cook for 4-5 whistles,with enough water to immerse the rajma completely. Once done, reserve the water.
  • Chop onions and tomatoes finely. In a kadai/ pan, heat oil and season with cinnamon, elachi, cloves and bay leaf. Add the chopped onion. Fry till transparent.
  • Add ginger garlic paste and give it a fry for a minute or two. Add chopped tomatoes, slit green chillies. Mix well.
  • Add salt, red chilli powder, garam masala powder and dhaniya powder. Cook in medium flame for 4-5 minutes until the raw smell goes away. Add kasoori methi crushed in between your hands.
  • Add the rajama and cook in medium flame for 5 minutes. Add the reserved water and cook for another 4-5 minutes.
  • Mix well, by now the water should have reduced and now, add 1 cup water and cook in medium flame for another 5-8 minutes.  
  • Your Rajma Curry is ready. serve with rice, paratha.
