Rice Kheer(ଚାଉଳ ଖିରୀ)


  • 1/2 cup soaked rice(ଚାଉଳ)
  • 3 cups milk (ଖିର)
  • 200 gm sweetened condensed milk(Nestle)
  • 1/2 Tsp cardamom powder (ଗୁଜୁରାତୀ)
  • 2 tsp desi ghee (ଘିଅ)
  • 1 tsp raisins
  • 1 tsp of roasted cashew nuts (କାଜୁ)
  • 4 Bay leaves (ତେଜ ପତ୍ର)
  • 1 tsp almonds chopped
  • Sugar to taste(ଚିନି)
  • A pinch of salt (ଲୁଣ)                                                                                                                        
  • Wash the rice and soak it for15-20 minutes. Now drain the water and crush the rice with your hands, So that the rice gets broken.
  • Take a pressure cooker, add 2 cups of milk, salt ,Bay leaves and little water and boil the rice in low flame for 2 whistles.
  • Remove the lid of pressure cooker only after the steam gets fully released in due course.
  • Heat 2 Tsp Ghee in a heavy bottomed pan or non stick pan and roast cashew nuts, almonds and raisins. Transfer them to a plate.
  • Now take the bay leaves out of the boiled rice,Then boil milk in another container. 
  • Pour the boiled milk into the pressure cooker. Stir continuously on low flame and make sure it does not burn at bottom. Cook it for 5-7 minutes.
  • After 5-7 minutes add condensed milk and again cook it for12-15 minutes.
  • Add sugar as per your taste and cardamom powder and mix well.
  • Mix 3/4 of dry fruits into the kheer and keeps rest of the dry fruits for garnishing.
  • Mixture will become very thick when it cools. So keep it thick medium consistency.
  • Transfer the kheer into a serving bowl and garnishing with the dry fruits.
  • Serve hot or cold and enjoy Kheer.
