Recipe for Saga Kharada | ଶାଗ ଖରଡା | Odisha Recipes | Handisaala:

Ingredients:

  • Drumstick leaf(ସଜନାଶାଗ) – 3 cup
  • Khada/ Kosola Leaf (ଖଡା ଶାଗ)– 1 cup
  • Kakharu/Pumkin leaf (କଖାରୁ ଶାଗ) – 2 cup
  • Pumkin/Kakharu(କଖାରୁ)(cube sized)– 200 grm
  • Garlic (ରସୁଣ) – 5-6 cloves
  • Chuda/poha (ଚୁଡା) – 1/4 cup
  • Mustard Oil (ସୋରିଷତେଲ) – 3 tbsp
  • Mustard seeds(ସୋରିଷ) - 1 tsp
  • Crushed garlic - 5-6
  • Cumin seeds(ଜିରା) – 1 tsp
  • Salt as taste (ଲୁଣ)
  • Water - 2 cup
  • Dry Chilli (ଶୁଖିଲାମରିଚ) - 4

Method:

  • Clean and cut Drumstick leaf, pumkin leaf and Khada/ Kosola Leaf ,Pumkin and keep aside in separate separate  plate.
  • Heat the pan.Add 2 cups of water and salt.Mix well.
  • Cook khada Pumkin,pumkin leaves,Khada saaga and mix well.
  • Cover it & let it cook on medium flame till leaves are almost cooked (keep stiring in-between).
  • Open the lid & mix well.
  • Now add chopped drumstick leaves and mix it.
  • Cover it & let it cook for 5 mins on medium flame(donot overcook the drumstick leaves)
  • After 5 mins,open the lid;transerfer to the bowl and keep a side.
  • Dry roast the flattern rice till turns light brown color.
  • Make coarse powder of garlic and flattern rice and keep a side.
  • In the same pan heat mustard oil
  • Add Mustard seeds,Cumin seeds,dry chilli; when seeds begins cracking, add Garlic and stir fry till garlic become brown.
  • Add cooked leaves & immediately cover the lid for 30 sec.
  • Saute it on high flame till water evaporated.
  • Add poha and garlic powder.
  • Saute it for 1 mins on high flame.
  • Server hot as aside dish.
