Milk bottle gourd/Lauki curry( ଖିର ଲାଉ)


  • Lauki (White/Bottle Gourd) – 1 medium(ଲାଉ)
  • Cumin Seed(for temper) – 1/2 (ଜିରା)
  • Milk – 1 cup(ଖିର)
  • All purpose flour – 1 tbsp(ମଇଦା)
  • masala paste - (Onion(ପିଆଜ -1,Garlic cloves(ରସୁଣ-10,Cumin seeds(ଜିରା) -1 /2 tsp)
  • Chilli powder -1 tsp(ଲଙ୍କା ଗୁଣ୍ଡ)
  • Salt to taste(ଲୁଣ)
  • Oil – 2 tbsp(ତେଲ
  • Whole garam masala - (Cinnamon(ଡାଲଚିନି - 1 stick, Cardamom(ଗୁଜୁରାତି - 4(2 for temper), Bayleaf(ତେଜ ପତ୍ର -1,)
  • Turmeric -1/2 tsp(ହଳଦୀ ଗୁଣ୍ଡ


  • Peel and Chop a Bottle Gourd in small cubes.
  • Heat 1/2 tbsp oil and put cumin seeds,when it starts cracking add cubed Lauki and cook along with little salt and turmeric powder till done. No need to add water as the Bottle Gourd will release a lot of water while cooking.
  • Mix 1/4 cup of Milk with 1 tbsp of All Purpose Flour/Maida to make a smooth paste. Once the Lauki/Gourd is cooked, add the milk paste and mix gently and keep a side.

  • Heat 1 tbsp oil in a kadai and put whole garam masala and saute it for cuple of minute.
  • Add masala paste,turmeric powder,chilli powder,salt and cook it till oil release out.
  • Finally add cooked lauki mix and saute it.
  • Finally crushed 2 more cardamom and sprinke it on lauki mix and mix well and cook for another 5 mins on low flame.
  • Serve hot with roti/paratha.
